United Chefs: Balkan Heart and Atlantic Soul

We hit the midpoint of our exchange with high energy and even higher appetites! On 15 March 2023, our kitchen became a space where history was served on a plate, as we explored the rich traditions of North Macedonia and Portugal.


🇲🇰 Lunch: The Warmth of North Macedonia


The North Macedonian team introduced us to the ultimate symbol of their hospitality: Tavče Gravče (Baked Beans).


The History & Etymology: The name literally translates to "Beans in a Skillet." This dish is the national pride of North Macedonia. Its roots are deep in the soil of the region, dating back centuries. Traditionally prepared in earthenware pots, it represents the resilience and simplicity of Macedonian rural life.

The Significance: It is more than just a meal; it is a Friday tradition in almost every Macedonian household. We learned that the secret lies in the slow baking process, a lesson in patience that mirrored our teamwork in the kitchen!


🇵🇹 Dinner: The Flavors of the Portuguese Coast


As the sun began to set, the Portuguese team took over to share their world-famous "comfort food."


The Main Dish: Bacalhau à Brás. You cannot talk about Portugal without talking about Bacalhau (salted cod). We learned that there are said to be over 1,000 ways to cook cod in Portugal! This specific recipe, shredded cod with thinly sliced potatoes and eggs, originated in the Bairro Alto district of Lisbon.

The Significance: This dish represents Portugal’s History of Exploration. Salted cod allowed Portuguese sailors to travel the globe. By cooking it together, we weren't just making dinner; we were touching a piece of maritime history that changed the world map.


🌍 A Night of Culture and Connection


After a productive evaluation session where we reflected on our growing "culinary diplomacy" skills, the evening exploded into a Cultural Night.


This wasn't just a presentation; it was a celebration! We moved from the kitchen to the dance floor:


Music & Dance: Learning traditional steps from our partner countries.

Storytelling: Sharing the myths and legends that define our homes.

Tasting: Sampling small treats brought from all six corners of our project.


It’s clear now: while we speak different languages, we all laugh and eat in the same way.
